Saute the onion and green pepper in olive oil and cool.
Add all the meatloaf ingredients to a bowl and mix. Form into a loaf. Place in a cookie sheet lined with foil and parchment paper. (You can use a loaf pan but I find that it takes longer to cook and the meatloaf takes greasy)
Place in a 375 degree oven uncovered for 30 min. Pour sauce over meatloaf and continue baking for 10-15 min.
