Mexican Rice
This is one of those recipes that uses up all those left over vegetables in the frig. You can add any vegetable to it and it’s always good. I also like to make this at the end of summer when your sick of freezing veggies and you can’t make one more zucchini bread.

  1. Put oil in a large frying pan over medium high heat.
  2. Add all the vegetables and cook about 8 minutes.
  3. Transfer to a large casserole dish or dutch oven. reserving 1/2 cup of cheese, add the remaining ingredients.
  4. Bake at 375 for 30 min. Top with reserved cheese and continue baking for 10 more minutes.
