This is truly a family favorite, maybe everyone's favorite. Making it from scratch is really easy. This sauce can be used for so many recipes. This is the sauce I use for spaghetti, lasagna, and baked ziti. If you leave the meat out and puree it, it makes a great pizza sauce.

Ingredients
- olive oil
- 1 onion chopped
- 1 pepper, green or red, chopped
- 1 cup mushrooms sliced
- 3 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp thyme
- 1/2 tsp rosemary chopped
- 1 bay leaf
- 2 tbsp tomato paste
- 1/2 cup dry red wine (optional)
- 32 oz can crushed tomatoes or 1 jar of marinera sauce add 1/2 can of water to rinse can
- 1 lb meat (beef, turkey or italian sausage) or meatballs
- grated parmesan cheese or cheese rind
- pasta of choice

Instructions
- Heat large heavy bottomed pot over med to med-high heat.
- Saute chopped onion, pepper, mushrooms and garlic in olive oil until soft, about 5 min.
- Add meat and cook until brown.
- Add spices and cook until fragrant.
- Add tomato paste and cook for 1 min.
- Add wine and crushed tomatoes.
- Add grated Parmesan cheese or cheese rind.
- Simmer for at least 30 min. or longer if you can. Freezes awesome!!
