Marinated Vegetable Salad

assorted fresh vegetables
(green/red peppers, cauliflower, broccoli, carrots,green/red onions, fresh green beans)

garlic
minced

olive oil

cider vinegar
1/2
cup
water

salt

pepper

tsp
sugar

oregano, basil, rosemary, parsley, thyme (can use dried)
fresh minced

black olives
drained
Instructions
In large pan combine all ingredients except olives. Bring to a boil. Reduce heat, cover and simmer 2 minutes. Cool slightly. Add olives. Transfer to a bowl or storage container. Cover. Chill 6 hours or overnight
