Ingredients
Salmon Patties
- 2 cups cooked salmon
- 1 stalk celery finely diced
- 1/3 red pepper finely diced
- 2 green onions finely sliced
- 2 tbsp 1/2 cup chopped fresh parsley
- 2 tsp lemon zest
- 1 tbsp lemon juice
- 1 tbsp old bay
- 1 tbsp Dijon mustard
- 3 tbsp mayo
- 2/3 cup bread crumbs more for frying
- 1 egg
dill sauce
- 1/4 cup mayo
- 1/4 cup sour cream
- 2 tsp Dijon mustard
- 2 tsp lemon juice
- 2 tbsp chopped fresh dill

Instructions
- In a large bowl combine all the ingredients together and mix. Gently fold flaked salmon. Cover with plastic wrap and refrigerate for at least one hour. Shape mixture into about 6 balls, flattening them into patties on a plate with the Panko crumbs, then turning to coat the other side with crumbs. Heat oil in a large skillet over medium heat. Fry the patties, in batches, until golden and crisp, about 5 minutes each side. Serve with dill sauce.
