Ingredients
- 3 sheets nori paper
- 1 1/2 cups sushi rice cooked and cooled
fish:
spicy mayo:
- 1/4 cup mayo
- 2 tsp sriracha sauce
- 1/2 tsp sesame oil
toppings:
- 1/2 avocado, diced
- 1/2 english cucumber, small dice
- 1/4 cup finely shredded carrots
- 2 tsp black sesame seeds

Instructions
- Preheat oven to 400 degrees F.
- Cut the nori squares into quarters.
- Toss the fish in a bowl with the rest of the fish ingredients and marinate for 4 hours, Don't marinate any longer as the fish will start to break down.
- Add a heaping tablespoon of rice to each nori square and spread out slightly.
- Transfer the square to a muffin tin, pressing down gently so the sides of the nori come up the sides of the muffin cup and the rice is in the middle.
- Fill each cup with the fish.
- Put the pan in the oven and bake for 15-17 minutes.
- Broil for 1-2 minutes at the end to give the fish a little color.
- Remove from pan and allow to cool slightly. Top with and or all of the toppings and drizzle with the spicy mayo.
