COOK and stir meat in 1 Tbsp. hot oil in large skillet on medium-high heat. ADD vegetables, dressing, garlic and ginger; stir until well blended. Mix corn starch soy sauce (hoisin sauce) and peanut butter if using. Add to mixture. Bring to boil; cover. Reduce heat to low; simmer 5 minutes. SERVE over hot cooked rice.
