Ingredients
- 2 cups zucchini grated and well drained
- 3 eggs
- 1 tbsp vanilla
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups flour (increase by 1/2 cup if using frozen zucchini)
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 cup nuts and/or raisins chopped

Instructions
- Beat eggs, vanilla, sugar and oil together until thick and lemon colored. Mix together dry ingredients and add to egg miture. Add zucchini and nuts/raisins. Grease and flour 2 bread pans and divide batter between them. Bake at 350° for 1 hour. Cool for 5 minutes in pans before turning out to cool. Makes 2 loaves
