  1. Wash and prick 5 small red potatoes.
  2. Microwave for 5 minutes.
  3. Cool slightly and gently flatten with the palm of your hand. You want to keep the potatoes as intact as possible while flattening.
  4. Heat the olive oil in a frying pan over medium heat.
  5. Gently lay the potatoes in the oil fry about 2-3 minutes per side. Alternately you can roast them on a greased baking sheet in the oven at 400 degrees for 30 min flipping halfway through
  6. Salt and pepper to taste.
