Ingredients
- 9 cups assorted fresh vegetables (green/red peppers, cauliflower, broccoli, carrots,green/red onions, fresh green beans)
- 3 cloves garlic minced
- 1/2 cup olive oil
- 1/2 cup cider vinegar
- 1/2 cup water
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp sugar
- 1 tsp oregano, basil, rosemary, parsley, thyme (can use dried) fresh minced
- 1 cup black olives drained

Instructions
- In large pan combine all ingredients except olives. Bring to a boil. Reduce heat, cover and simmer 2 minutes. Cool slightly. Add olives. Transfer to a bowl or storage container. Cover. Chill 6 hours or overnight
