I found this recipe on Pinterest from afamilyfeast.com. One of my absolute favorite winter soups. So much flavor and so healthy. With crusty bread and this soup you don’t feel guilty about eating dessert.

Ingredients
- 1/2 lbs bulk sweet italian sausage
- 1 onion , diced
- 1 cup celery, diced
- 1 cup carrots, diced
- 1 red pepper, diced
- 2 tbsp garlic , minced
- pinch of red pepper flakes
- 1/4 cup tomato paste
- 5 fresh tomatoes diced
- 1 zucchini diced
- 1 yellow squash, diced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp fresh basil chopped
- 2 qts chicken or vegetable stock
- 1 tsp fresh oregano, chopped
- parmesan rind
- 1 cup grated parmesan

Instructions
- In a large soup pot or large Dutch oven, place olive oil over medium high heat and once hot, add sausage meat. Break up meat while it cooks. Once the meat has browned, add onion, celery, carrots and bell pepper and sauté for four minutes. Move the vegetables to the sides and lower heat to medium. Add garlic, pepper flakes and tomato paste to center and cook for two minutes, stirring occasionally. Add tomatoes, salt, pepper, spices, broth, and Parmesan rinds along with fresh basil and fresh oregano and stir to combine. Bring to a medium simmer and cook about 10-15 minutes. Add the zucchini and yellow squash and cook until the vegetables are tender, another 10-15 minutes. Remove from heat and add Parmesan cheese and stir to melt. Remove and discard the Parmesan rinds.
