Everyone has a meatloaf recipe and none are the same. This was my mother’s recipe and I’ve been making it for 50 years (yes since birth).

Ingredients
Meatloaf
- 1/4 onion , diced
- 1/4 green pepper, diced
- 1 lb ground meat I use a mix of ground beef and pork. If you can find meatloaf meat with ground veal also that is the best.
- 1 egg
- 2/3 cup bread crumbs
- 1/2 cup tomato sauce i would not recommend ketchup as it is too sweet
- 2 tbsp parsley minced
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Sauce
- 1/2 cup tomato sauce
- 1 tbsp Brown sugar
- 1 tbsp mustard

Instructions
- Saute the onion and green pepper in olive oil and cool. Add all the meatloaf ingredients to a bowl and mix. Form into a loaf. Place in a cookie sheet lined with foil and parchment paper. (You can use a loaf pan but I find that it takes longer to cook and the meatloaf takes greasy) Place in a 375 degree oven uncovered for 30 min. Pour sauce over meatloaf and continue baking for 10-15 min.
